Glucosinolates (mustard oil glycosides) in broccoli seeds

The secondary plant substances glucoraphane and sulforaphane belong to the group of glucosinolates (mustard oil glycosides). Broccoli is a very good source of this. Broccoli seeds and sprouts in particular contain glucoraphane and sulforaphane. Since the compounds are not only water-soluble but also particularly sensitive to heat, the content is greatly reduced in cooked vegetables. For example, one would have to eat 250 pounds of cooked broccoli to get the same sulforaphane content as 1 tablespoon (10 g) of broccoli seed. Consuming broccoli seeds Sulfo forte in an unheated state is therefore a good alternative.
